Ingredients
1 tablespoon olive oil
1/2 onion, chopped
3 cloves garlic, chopped
1 tablespoon chile pepper flakes
2 tablespoons tomato paste
1/2 bunch kale, chopped
1 32-ounce can crushed tomatoes
1 15-ounce can white beans
Handful of small pasta, like ditalini
1 cup water
Salt and pepper
Grated parmesan to serve
Preparation
Heat oil in a heavy pot, add onion and garlic and cook for about 5 minutes. Add chile pepper flakes and cook 1 minute, add tomato paste and stir, cook 1 minute more.
Add kale and toss to coat, cook about five minutes, until kale becomes slightly tender.
Add canned tomatoes, white beans, and water, stir to combine. Bring to a boil. Toss in pasta and stir, then reduce heat and cook 15 minutes.
Add salt and pepper to taste, serve with grated parmesan.
