Ingredients
3 pounds uncooked large shrimp, peeled, deveined, tails left intact
3/4 cup olive oil
1/2 cup finely chopped fresh cilantro
1/4 cup white wine vinegar
3 tablespoons fresh lemon juice
3 jalapeno chilies, seeded, minced
3 large garlic cloves
1/4 teaspoon cayenne pepper
Salt and pepper

3 large lemons, sliced
1 large red onion, sliced
Preparation
Bring large pot of water to boil. Add shrimp and cook until pink and opaque, 3 minutes. Transfer to large bowl of ice water using slotted spoon. Drain. Place shrimp in large bowl.
Whisk together oil and next 6 ingredients in medium bowl. Season with salt and pepper. Pour marinade over shrimp. Toss to coat. Layer shrimp, lemon slices and onion in large glass bowl. Pour any remaining marinade over.
Cover, and refrigerate 4 hours. (Carl be prepared 1 day ahead)
