Ingredients

1 pound of pork tenderloin cut into medallions about 3/4 to 1 inch thick

8 - 12 oz. dark beer, black and tan or porter

2 - 3 Tbsp. real maple syrup

1 - 3 tsp. cayenne pepper

Preparation

Cut pork into medallions and put it in a sealable plastic bag with the beer and marinate for 4 - 12 hours.

Drain beer from bag and add maple syrup to coat medallions.

Sprinkle cayenne pepper in bag to coat medallions.

Take medallions out and cook on a grill or in iron skillet on stovetop for about 3-4 minutes per side based on desired doneness and thickness of medallions.
