Ingredients

1 fresh mango peeled and diced

8oz of fresh orange juice reduced down to 2oz( see note above)

4 oz of coconut milk

2 egg yolks

2oz sweet thai chili sauce

1 TBSP of fresh mint and cilantro

1 tsp fresh chopped ginger and garlic each

1 TBSP fresh chopped shallot

2oz sesame oil

8 oz of vegetable oil

Sea salt and pepper to taste

Preparation

Place all ingredients except the oil in a bowl of a food processor and turn on. Let it run for a minute and then slowly add in the oil. Taste and adjust and hold chilled.
