Ingredients

Sauté in olive oil:

diced onion(1-2)

diced celery (2-4-stalks)

diced carrots (2-3)

Cook until translucent, then add 2 chopped apples and cook briefly.

Wisk in:

1 T curry powder

1 tsp powdered ginger

1 tsp cumin

1 tsp coriander,

1/2 tsp turmeric

1/4 tsp cayenne pepper

2-3 minced cloves of garlic

1 T flour

Preparation

Add: 1 can Rotel tomatoes, 1 quart of stock (chicken, veggie), 1 cup of lentils or 3-4 diced potatoes. Sometimes I add meat, spinach, whatever I have to use up. You could also use leftover rice as a substitute for the lentils.

Bring to a boil and simmer for 30 min or until lentils are done. Sometimes I add a can of coconut milk or plain yogurt.

You can serve with fresh cilantro or parsley, dried coconut, whatever sounds good.
