Ingredients

1 1/4 t toasted cumin seed, ground

1 1/4 t toasted coriander, ground

3/4 C vegetarian mayonnaise ( I like Spectrum) or regular maynnaise

4 shallots chopped

2 fresh jalapenos, chopped fine, with seeds

1/4 loosely packed chopped fresh cilantro

2T pure maple syrup

1 t low salt soy sauce or tamari

1 t dijon mustard

1 t cider vinegar

2 T fresh lime juice

1 t salt, or to taste

6 C green cabbage sliced very thin

3 C red cabbage, sliced very thin

1 medium red bell pepper, sliced very thin

1 yellow bell pepper, sliced very thin

2 small carrots, grated

Preparation

In a food processor, combine the cumin through the lime juice. Toss the cabbages, peppers and carrots together, then toss with the dressing. Adjust seasoning to taste
