Ingredients
Grilled Eggplant
1 Large Eggplant
¼ cup olive oil
1 large lime
2 Tbsp Cajun Blackening Seasoning
Grilled Shrimp
1 pound large peeled and veined shrimp
2 tbsp olive oil
½ tsp kosher salt
Freshly ground black pepper, to taste
Warm Honey Mustard Dressing
1/3 cup olive oil
2 tbsp white wine vinegar
1 tsp balsamic vinegar
1 egg yolk
1 tbsp honey
2 tsp prepared yellow mustard
1 tsp pesto
¼ tsp kosher salt
Freshly ground black pepper, to taste
Preparation
Grilled Eggplant Slice eggplant into ½ inch thick round slices. Drizzle olive oil and squeeze lime over eggplant and let sit several minutes until juice is absorbed. Sprinkle spices over slices covering thoroughly. Grill 5-8 minutes on each side until slightly charred.
Grilled Shrimp Toss shrimp with all of the above ingredients. Grill the shrimp for 3 minutes. Turn and cook on the other side for 3 minutes, or until done.
Warm Honey Mustard Dressing Add all ingredients in a small metal bowl and whisk until thoroughly incorporated. Place over a pan of simmering water and continue whisking until warmed and thickened.
