Ingredients
I Tablespoon Olive Oil
1 Large Onion, Chopped
3 cloves garlic, Chopped
1 1/2 - 2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon ground coriander
Cayanne pepper to taste
1 lb ground chicken
1 (15 ounce) can tomatoe sauce
1/2-3/4 cup mild or medium salsa
1 (16 oz) bag frozen corn kernels
S+P to taste
chopped cilantro
Preparation
In a large soup pot, heat oil over medium heat. Add onion and garlic and cook 5-10 minutes stiring frequently until onions are translucent. Stir in chili powder, cumin, coriander and cayenne and cook 2 minutes. Stir often until flavors have melded and chili is thick. Add cilantro and serve.
