Ingredients
1 lb shrimp
2 Tbs Thai chili sauce
1 cup chicken broth
2 medium tomatoes
1 tsp brown sugar
2/3 cup coconut milk
Jasmine rice
green onion
Preparation
Combine shrimp with spicy sause, blend and refrigerate. In a wok or large skillet, bring stock to a boil. Add tomatoes, kaffir lime leaves, lemon juice & brown sugar. Reduce heat & simmer for 8-10 minuets til orange-pink in color, about 1-2 minuets. Transfer to a warm serving dish, remove kaffir lime leaves. Garnish with green onions. Serve over cooked rice.
