Ingredients
1 cup mayonnaise
2 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice, plus more to taste
1 1/2 teaspoons puréed canned chipotle peppers in adobo
1/4 cup finely chopped fresh
cilantro leaves
4 large garlic cloves, grated or minced (about 1 heaping tablespoon)
1 teaspoon kosher salt, plus more to taste
Preparation
- Put the mayonnaise in a small bowl. Whisk in the olive oil and the lemon juice. Add the puréed chipotle, cilantro, half of the garlic and salt and stir to combine.
- Taste, and add more garlic, lemon juice and/or salt to taste.
