Ingredients
1 small Kirby cucumber
4 scallions
1 1/2 tablespoons Oriental sesame oil
1 1/2-2 teaspoons reduced-sodium soy sauce
1-2 teaspoons hot Oriental chili sauce
2 tablespoons red wine vinegar
6 oz. very thin noodles
Preparation
- Boil 3 quarts water in covered pot.
- Wash, trim and cut cucumber into medium dice.
- Wash, trim and slice scallions coarsely.
- Combine cucumber and scallions with sesame oil, soy sauce, chili sauce, and vinegar in serving bowl.
- Cook fresh noodles in boiling water, until tender but firm.
- Drain noodles and mix thoroughly with sauce.
