Ingredients
4 tbsp butter
2 lbs boneless, skinless chicken breast, cut to small pieces
salt/pepper to taste
pinch of chicken base
pinch granulated garlic
1/4 cup julienne green peppers
1/4 cup julienne red peppers
1/4 cup julienne carrots
1/4 cup shiitake mushrooms
1/4 cup diced green onion
16 oz Udon noodles
1/2 cup teriyaki sauce
1/4 teaspoon Sriracha
1 tsp fresh, diced parsley
1 tsp sesame seeds
Preparation
Heat saute pan and add butter. When pan hot & butter melted, add chicken and cook in batches until browned on first side. Lightly salt/pepper before turning, then brown second side. Add chicken base and garlic to chicken and stir well. When chicken almost cooked through, add: peppers, carrots, and mix well. After a min, add mushrooms, onions. Saute vegetables and chicken together, stirring occasionally. Meanwhile, cook Udon noodles according to package directions. Drain noodles well and add to cooked chicken and vegetables. Top noodles with teriyaki and Sriracha sauces, mix well. Place in middle of large pasta bowl, garnish w/parsley and top w/sesame seeds.
