Ingredients
1/2 c diced onion
3 garlic cloves, minced
2 14-oz cans diced tomatoes w/ basil, garlic, oregano (drained)
1/2 c heavy cream (or a little more)
1/2 tsp salt
3 TBSP parsley
12 oz pkg pasta (bowtie or penne)
2 TBSP olive oil
1 lb Sweet Italian Chicken Sausage w/ casings removed and sliced thinly (precooked, I like Al Fresco Italian)
1/2 tsp red pepper flakes
handful of sliced mushrooms
Parmesan Cheese
Fresh Basil - optional
Preparation
Cook pasta until al dente and dran. Heat oil in skilled over med heat. Saute garlic and onion until transparent. Add sausage and pepper until browned. Stir in drained tomatoes, cream, mushrooms and salt. Simmer until thickened, 8-10 mins. Stir pasta into sauce and heat through. Add fresh basil just before serving. Top with parmesan.
