Ingredients
1 - 14 1/2 oz. can stewed tomatoes
1 med. red onion chopped
1/4 c. chopped parsley
1 4 oz. can diced green chilies with juice
1 med. clove garlic, minced
1 T. white vinegar
1 tsp. dried oregano
1/2 tsp. salt
2 C. shredded Monterey Jack cheese
Preparation
375 degrees. Blend everything but cheese in food processor until coarsely chopped. Transfer to oiled casserole. Stir in 1/2 C. cheese and top with remaining 1 1/2 C. cheese.
Bake uncovered for 20 minutes.
