Ingredients

4 cups sliced almonds

1 egg white

1/4 cup sugar

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ginger

1/4 teaspoon cardamom

1/4 teaspoon cloves

1 vanilla bean

Pinch pepper

Preparation

Preheat the oven to 325 F.

Mix the sugar with the vanilla bean frothing in your hands until well incorporated.

Mix all the ingredients together until the nuts are well coated.

Spray a baking sheet with nonstick oil spray or use a silkpad and spread the nuts on it. Bake until the nuts are golden brown (approximately 25 minutes) , stirring constantly (every 5 minutes).

Let them cool and store in airtight container.

Use them as a garnish.
