Ingredients

4-5 pieces of bacon

1 lb lean ground sirloin

Seasoning mix:

2 tbsp chili powder

1 tbsp cumin

1 tbsp paprika

1 tsp granulated garlic

1 bell pepper, diced

2 jalapeno peppers, diced

1 habanero pepper, diced

15 oz. can kidney beans, rinsed (or black beans, rinsed)

2 - 15 oz. cans tomato sauce

15 oz. can diced tomatoes

12 oz. bottle of dark beer

Sprinkle of seasoning salt (or Penzeys “4S”)

Cayenne pepper to taste

Black pepper to taste (or McCormick “Hot Shot”)

Pinch of dried oregano

Pinch of red pepper flakes

Optional toppings:

1 white onion, chopped

Pickled jalapeno pepper rings

Shredded cheddar cheese

Oyster crackers

Sour cream

Preparation

Brown 4-5 pieces of bacon. Drain fat, chop coarsely, set aside.

Brown 1# ground sirloin in stock pot. Drain fat.

Add bacon, seasoning mix, bell pepper, jalapeno peppers, habanero pepper, beans, tomato sauce, diced tomatoes, beer. Mix together.

Sprinkle seasoning salt, add cayenne pepper, black pepper, pinch of dried oregano, pinch of red pepper flakes.

Mix and bring to boil.

Reduce heat, simmer for one hour, stirring occasionally.

Add desired toppings and serve with cold beer.
