Ingredients
2 T vegetable oil
1 onion choipped
2 garlic cloves finely chopped
1 lb ground turkey
4 tsps chili powder
1 tbsp ground cumin
2 tsps dried oregano leaves
2 jalapeno peppers, sedded and chopped
1 1/2 cups crushed canned tomatoes
2 1/2 cups chicken stock
1 can pinto beens drained and rinsed
1 can black beans drained and rinsed
1/2 tsp black pepper
1 tsp salt
Preparation
In a large suacepan, heat oil over medium heat. Add Onion and garlic. Saute until tender. Add Turkey, saute until no longer pink. Stir in spices, peppers, tomatoes and stock. Bring to a boil, reduce heat and simmer for 20 minutes. Uncover, add beans and simmer another 20 minutes until thickened.
