Ingredients

1 onion (diced)

4 cloves of garlic (minced)

1 medium sized carrot (diced)

1 celery stalk (diced)

1 jalapeno (diced, discard seeds and ribs for milder sauce)

1 pound ground beef

1 tsp of ground cumin

1 tbsp worcestershire sauce

1 tbsp of ketchup (add more to make sweeter)

1 tsp of tomato paste

Tabasco to taste

⅓ cup of lager or toasted beer

1 8oz can of tomato sauce

4 hamburger buns or kaiser rolls

Shredded cheddar (optional)

Preparation

  1. Saute onion and garlic with olive oil or butter (add a dash of salt) at medium high heat for 4-5 minutes or until browned. Add carrot, celery and jalapeno and continue to saute for another 4-5 minutes until the vegetables are soft.

  2. Add ground beef in evenly in pieces over the vegetables. Salt and pepper the beef and add cumin. Allow to sear for 1-2 minutes before breaking up into smaller rounds and mixing with vegetables. Brown the beef for 3-4 minutes.

  3. Add worcestershire sauce, ketchup, Tabasco and tomato paste. Mixing it into the beef and vegetables. Add tomato sauce and beer, bringing the mixture to a boil, cooking the liquid down for 6-10 minutes (until thick but not dry). Add salt and ketchup to taste.

  4. Serve beef mixture on buns/rolls, topping with cheddar if desired.
