Ingredients
1 lb shrimp
1/2C butter
1 1/4C Sauterne wine
4 cloves garlic - minced
4 green onions - minced
4T diced green chile (ortega)
2 tomatoes - diced
1 or 2 jalapenos diced
1/3C cilantro and parsley (1/2 each, chopped)
1T olive oil
fresh lemon
Preparation
Heat olive oil on med/high heat and add onion, jalapeno, green chili and tomato and saute 3 min Turn off heat In a large frying pan add butter and wine. Simmer 5 min Add garlic. Cook 4 more min Add tomato mixture to wine and butter. Continue to cook on med/high heat and mix well
Turn up to high and add shrimp. Cook for 3 min
Squeeze lemon juice onto shrimp
Cook til pink/opaque - DON’T OVERCOOK
Turn off heat and stir in parsley/cilantro
