Ingredients
1 Medium red onion, finely chopped
2 scotch bonnets, seeded and finely chopped
2 TBS hot water
1 TBS salt
1 TBS sugar
4 TBS lime juice
4 TBS olive oil
1/2 C wine vinegar
Preparation
- Dissolve the salt and sugar in the hot water
- Add the scotch bonnet to the water to extract the heat.
- Mix in the onion.
- Add the lime juice, olive oil and wine vinegar and mix well.
- Cool
