Ingredients

1/4 cup dark paprika

1/4 cup mild or medium chili powder

1/4 cup brown sugar

1/4 cup ground black pepper

1 Tbsp cayenne pepper

1 Tbsp garlic powder

1 Tbsp sea salt

1 or more Rack of ribs

Preparation

Rub: 1.Add all ingredients in a large bowl using a whisk to mix thoroughly. 2.Apply roughly two Tablespoons to each large rack of beef ribs and smoke.

Prep: 1.Cut into individual pieces if you have thick, meaty racks of ribs, otherwise leave racks intact. 2.Apply rub to beef. 3.Smoke at 250F for 6 hours, give or take.

I don’t have a smoker, so I put them in a roasting pan with elevated rack for 6 hours at 250F

  • Remove the membrain from the back of the ribs with a butter knife, peeling/prying the layers off the back.
