Ingredients
18 ounces of unsalted cashews
3 T. finely chopped rosemary leaves
1/2 t. chipotle powder (I use freshly ground)
1/2 t. smoked paprika
1 T. dark brown sugar or real maple syrup
2 T. unsalted butter, melted
Sea salt to taste
Preparation
Preheat oven to 350 degrees.
Combine the rosemary, chipotle, paprika, sugar, and butter.
Using a non-stick baking sheet. Toast until the nuts are warmed. (5 minutes)
Mix with rosemary mixture. Return to oven for an additional 5-10 minutes until golden brown, stirring every few minutes.
Toss with salt (start with 2 teaspoons) to taste.
Serve warm but also good cool.
