Ingredients
1 cup all-purpose flour
1 cup whole wheat flour
2 teaspoons cinnamon
1 teaspoon powdered ginger
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups sugar
3 large eggs
3/4 cup vegetable oil
1 teaspoon vanilla
3 cups pureed pumpkin
3/4 cup chopped pecans*
4 Tablespoons brown sugar*
Preparation
Preheat the oven to 325 degrees F. Grease a medium muffin pan.
Mix the flours, spices, baking soda, baking powder, and salt together.
In a separate bowl, mix the sugar, oil, eggs,vanilla & pumpkin. Add flour mixture just until combined. Pour into prepared muffin pan 2/3 full.
*variation… mix nuts & brown sugar, spoon a TBL spoon onto each muffin before baking.
Bake for 20 minutes. Until toothpick comes out clean. Cool for 5 minutes and turn out onto a cooling rack.
