Ingredients

3 cups all-purpose flour

2 cups sugar

2 tspns b. soda

1 tspn b. powder

1 tspn ground cinnamon

1/2 tspn salt

1/4 tspn ground cloves

1/4 tspn ground nutmeg

2/3 cup canola oil

3 eggs, lightly beaten

1 (15 oz) can pumpkin

1/2 cup dried currants or raisins

Preparation

  1. Preheat oven to 350 degrees
  2. Lighly spoon flour into dry measuring cups; level with a knife. Combine flour and next 7 ingredients in a large bowl, make a well in center of mixture. Combine oil, eggs and pumpkin in a medium bosl, stir with a whisk until smooth. Add to flour mixture, stirring just until moist. Fold in currants.
  3. Spoon batter into 2 (9x5 inch) loaf pans coated with cooking spray. Bake at 350 degrees for 1 hour or until a wooden pick inserted in center comes out clean. Cool loaves in pans 10 minutes on a wire rack and remove from pans. Cool loaves completely. Yield 2 loaves, 16 serving per loaf (serving size, 1 slice) calories 150
