Ingredients
1 lg. egg white
3 tablespoons dark brown sugar
1 tablespoon kosher salt
2 tea. dried oregano
3/4 tea. ground coriander
1/2 tea. ground cumin
1/4 heaping tea. cayenne pepper
2 cups unsalted mixed nuts (we use cashews, pecans, almonds and sometime peanuts)
Preparation
Whisk all ingredients except nuts until slightly foamy. Add nuts, toss to coat and spread on a sheet pan (with sides) that has been lined with parchment paper or aluminum foil. Bake at 250 degrees for 45 minutes, stirring every 15 minutes. Nuts will be fragrant and slightly darker but still moist. Cool completely on pan - store in an airtight container.
