Ingredients
4 cinnamon sticks
4T coriander seed
4T mace
4T ginger, ground
1qt mirepoix
1/2c maple syrup
1/2c honey
1c orange juice
1/2c lemon juice
2qt duck stock
Preparation
combine all and simmer until reduce to 1 1/2qt. mount with 4-6T plugra butter.
