Ingredients

1/4 cup olive oil

1/4 cup roasted unsalted peanuts

1 chili pepper, chopped

2 small red onions, chopped

3 garlic cloves, minced

1 tablespoon paprika

1/2 teaspoon ground ginger

1.5 teaspoons chili powder

5 hard-boiled eggs, chopped

2 tomatoes, chopped

2 teaspoons cilantro, chopped

1 tablespoon soy sauce

Juice 1 lime

1/2 teaspoon salt

Preparation

  1. Saute peanuts with most of the oil.
  2. Stir in chili, onion, garlic, saute.
  3. Add paprika, ginger, chili powder.
  4. Fold in eggs, tomatoes, cilantro, soy, lime, some oil, and salt.
