Ingredients
1/2 1/2 c. Port
1/2 c. orange juice
1 cinnamon stick, broken in half
4 whole cloves
2 star anise
3 c. fresh or frozen cranberries
1 c. brown sugar
1T grated orange peel
Preparation
In a large sauce pan combine the first five ingredients and bring to a boil. Reduce heat and simmer 5 to 8 minutes to infuse the flavours of the spices. Remove spices from the pan. Add cranberries, sugar and orange peel and simmer 8 - 10 minutes, or until the berries pop and sauce thickens. (It will thicken more when cold.) Pour sauce into a bowl and chill.
