Ingredients

1 teaspoon coriander seeds

1 teaspoon cumin seeds

1/2 teaspoon fennel seeds

1 teaspoon firmly packed light brown sugar

1 teaspoon kosher salt

2 salmon fillets with skin intact and bone removed

2 tablespoons olive oil

Preparation

Heat s small fry pan over medium high heat. Put coriander, cumin and fennel seeds in pan, stirring occasionally until golden brown 2 to 3 minutes. Grind spieces in a grinder. Transfer to a small bowl, stir in brown sugar and salt. Place salmom skin side down on a plate, top each fillet with spice mixture, cover with plastic wrap and chill for 1 hour. Preheat oven to 400 degrees Inn a large ovenproof fry pan cover medium heat and add fish transfer to oven and cook for 8 to 10 minutes
