Ingredients
4 Cups flour
1 1/2 tsp cinnamon
1 tsp ground ginger
1/2 nutmeg
1/2 tsp salt
1/4 tsp allspice
1/4 tsp cloves
(if you dont have, just add another 1/4 tsp allspice)
1 1/2 Cups butter, room temp
1 Cup sugar
1 large egg
1 tsp vanilla
Preparation
In a large bowl, mix flour, salt and spices til blended. In another bowl, beat butter and sugar w/mixer til light and fluffy. Beat in egg and vanilla. Reduce mixer speed to low and gradually add flour mixture, beating till well blended. Divide dough into thirds. Shape each into ball and between two sheets of saran wrap, roll out to 1" thick and refrigerate on cookie sheet til firm enough to roll (1 hr.) Heat oven to 375. On lightly floured surface, roll one third of dough at a time to 1/4" thickness (keep remainder refrigerated). Cut out shapes with cutters. Place 1" apart on ungreased cookie cheet. (Chill and reroll scraps) Bake about 12 minutes or til cookies are golden on underside and edges are slightly brown. Cool on wire rack or paper. Ice and decorate with Royal Icing.
