Ingredients

Two large onions

1 lb. double smoked bacon (at least).

1 large can tomatoes

1 can crushed tomatoes

1 package egg noodles

salt and pepper

Preparation

Cut bacon into small chunks, and onion into rings, which can then be cut in half. In a heavy skillet, fry together until onion is soft and golden and bacon is almost crispy. At same time, put canned tomatoes in saucepan and cook over medium heat until juice is reduced by at least half. Add crushed tomatoes and remove from heat. Add to bacon and onion mix and simmer slowly until egg noodles are cooked. Add to egg noodles and season with salt and pepper to taste. Serve hot; with good crusty Italian bread if desired. Also good the next day reheated, flavours are stronger and more melded.
