Ingredients
250 gram flour- 2 cups
3-4 eggs
3 tbsp water approximately
Can use semolina 2-3 tbsp
100-150 gm cheese. Gouda or emmental
1-2 onions
Preparation
Mix together flour eggs and salt. Add some water and mix with spoon or mixer until bubbles appear. Let stand 15-20 mins. Bring pot of salted water to boil. Fill press with dough to 3 cm from top. Squeeze out noodles cook 1-2 mins. Will float when ready. Scoop out with seive spoon. Rinse in cold water and drain.
For cheese onion spatzle. Warm bowl. Grate cheese. Fry onions until golden. Add both to hot noodle and toss.
