Ingredients
2 cups all-purpose flour
1 teaspoon salt
2 eggs, beaten
3/4 cup milk
1/4 cup water
Pepper, to taste
Preparation
In a medium bowl, mix dry ingredients together. In a separate bowl, mix together eggs, milk & water. Make a well in the center of the flour; pour the wet ingredients into this well and stir until combined. Allow to sit a few minutes.
Spoon batter in spatzle maker and push through into lightly salted boiling water. When spatzle floats to the surface (approx 2-3 min), scoop out with a slotted spoon. Place cooked noodles in bowl of cold water or rinse with cool water to stop cooking & prevent sticking. (Or the unrinsed noodles with some butter….)
