Ingredients

1-1/3 cup water

Step 1:

1/2 medium green pepper, diced

1/2 medium white or yellow onion, diced

1/2 celery stalk, diced

1/4 tsp lite salt

Step2:

2 small tomatoes, chopped

2/3 cup uncooked brown or white rice

1/4 tsp chili powder

freshly ground black pepper

dash of hot sauce

Preparation

  1. In a medium saucepan, combine water, green pepper, onion, celery, and salt. Bring to a boil. Then, reduce heat and cover. Simmer for 5 min.

  2. Stir in tomatoes, rice, chili powder, pepper, and hot sauce. Return to boil. Reduce heat to low; cover and simmer approx 20 min or until liquid is absorbed.

  3. Serve and enjoy!
