Ingredients
1 - 2 cans 28 oz whole tomatos. 1 cup brown rice. 1 -2 med onions. 1 tsp salt
1/2 tsp pepper
1/2 tsp cayenne plus more too taste

Preparation
In large cassarole dish with lid add 1 can tomatoes (roughly chopped), 2 chopped onions, seasoning. Stir. On top thick slices cheddar cheese. Put lid on an cook at 350 F. Once luiquid starts to absorb stir every 30 minutes, add second can of tomatos when dry and add more cayenne to taste. Add water so it does not dry out. Cook until done.
