Ingredients
One 6 oz. package Farmhouse® Spanish Rice
1 cup onion, chopped
3/4 cup green bell pepper, chopped
2 cloves garlic, minced
2 Tablespoons olive oil
1 lb. sliced, boneless, skinless chicken
1-1/2 cups water
One 14.5 oz. can diced tomatoes, undrained
2 teaspoons Italian seasoning
1/3 cup sliced pimento olives
Preparation
In a large skillet, sauté onion, bell pepper and garlic in olive oil until tender. Add chicken and cook until no longer pink. Add water, tomatoes, rice, contents of seasoning packet and Italian seasoning; bring to a boil. Reduce heat, cover and simmer 15 minutes. Add olives and cook 5-10 minutes longer or until moisture is absorbed.
