Ingredients

2 lbs. spinach, wahsed, cooked, chopped and speezed dry

1/2 lb. crumbled feta cheese

2 eggs

1 yellow onion chopped

2 handfuls chopped parsley

2 Tbs. lemon juice

2 Tbs. dill

salt and pepper to taste

1 package phyllo dough

olive oil

Preparation

Combine all ingredients expect the phyllo and olive olive oil in a large bowl and mix well. Unroll the phyllo, working quickly using a pastry brush, lightly coat the sheet with oil. Put 1/3 cup of spinach mixture in the center and wrap with the dough. Using a second sheet, wrap the edges and roll to make a turnover shape. Poke 2 small holes in the top and place on a greased baking sheet. Continue with remaining mixture and phyllo. Bake in a 425 degree oven for about 20 minute, or until golden brown. Serve with Tzatziki sauce. Heaven!
