Ingredients
1 bunch gr. onios diced
2 bunches leeks, diced
1/2 c. parsley,chopped
1/2 c. dill, chopped
1/4 tsp. nutmeg
2.5 lbs. spinach
1/2 c. olive oil
s & p to taste
4 eggs, lightly beaten
1/2 lb. feta
1/4 c. melted buttr
1/4 c. olive oil
1 phyllo pastry
Preparation
Wash and drain chopped spinach. Heat oil in large dutch oven. Saute the onions and leeks until tender. Add spinach, parsley and dill and cook 5 to 10 minutes Add nutmeg and S & P. In large mixing bowl, combine the feta and eggs. Add cooled spnach mixture. Melted butter and oil for philo. Bake 375 for 30 - 40 minutes
