Ingredients
1 lb Pancetta. as thinly sliced and possible and diced
1 very large yellow onion, finely chopped
1 - 2 cans chopped tomatos in juice (don not get stewed)
Tomato paste
Red pepper flakes
Salt and pepper
Sugar
Spahgetti
Preparation
- Heat olive oild in large pot on MH heat. Add pancetta and cook until browned.
- Remove from pan and set aside. Resrve oil in pan.
- Saute onions in 2 tbsp reserved oil until browned. Add more reserved oil, if necessary.
- Add tomatos, S & P, and small amount of tomato paste. Add sugar if desired. Saute for 10 mins, stirring often.
- Add pancetta back and red pepper flakes to taste. Cook 10 mins.
- Serve over prepared spahgetti noodles.
