Ingredients
1 lb of spaghetti or pasta of your choice
35 oz. of chopped tomatoes (Pomi)
1 bunch of arugula
10 tablespoons olive oil (may cut down with water)
1/2 cup of parmesan cheese
5-10 fresh basil leaves
Salt and Pepper to taste
Preparation
Pour tomatoes into heated pan. Add olive oil, arugula (cut into strips), basil, black pepper and salt. Cook until simmering. Add to cooked pasta and top with cheese.
