Ingredients

2 T olive oil

2 med onions, peeled and chopped

1 clove garlic, minced

1 bay leaf

1/4 t dried basil

1 t salt

1/4 t pepper

2 t honey or light brown sugar

1 can tomatoes ( 1lb + 13oz)

1 can tomato paste (6oz)

1/4 cu dry white wine

1/4 cu minced parsley

1 can minced clams (10.5 oz)

1 lb thin spaghetti

grated Parmesan cheese

Preparation

  1. Heat oil over moderate heat; add onions and garlic and sauté, 8-10 min, until golden

  2. Add bay leaf, basil salt, pepper, honey , tomatoes, tomato paste, wine, parsley and liquid, drained from clams. Reserve clams. Simmer 1 hour.

  3. Mix in clams and heat 5 min longer.

  4. Make pasta and drain, reserving a little liquid. Mix pasta into Red Clam Sauce. Thin, if needed with pasta water. Serve with parmesan cheese.
