Ingredients
12 ripe tomatoes
4 Tbs. olive oil
3 Tbs. chopped fresh oregano
3 Tbs. chopped fresh basil
1 tsp. salt
1 tsp pepper
1 lb. pasta
Preparation
Pre-heat oven to 250 degrees. Pour 2 Tbs. olive oil on cookie sheet with sides. Slice tomatoes about 1/4 inch thick, and lay on the cookie sheet. Pour the remaining 2 Tbs. olive oil on tomatoes, sprinkle oregano, basil, salt and pepper on tomatoes and bake for 45 minutes, stirring occasionally. Meanwhile, cook pasta in salted, boiling water until al’dente. Pour cooked tomatoes over pasta, sprinkle with parmesan cheese.
