oz. uncooked spaghetti or angel hair pasta (capellini)

2/3

cup apple juice

1/2

cup creamy peanut butter

tablespoons soy sauce

1

teaspoon finely chopped gingerroot

Dash ground red pepper (cayenne)

1/4

cup chopped fresh cilantro

Chopped peanuts, if desired

Preparation

Cook and drain spaghetti as directed on package. Cover to keep warm.

Meanwhile, in small saucepan, mix all remaining ingredients except cilantro and peanuts. Cook over medium-low heat for 3 to 4 minutes or until mixture is melted and smooth, stirring frequently. Stir in cilantro. Serve over spaghetti. Top with peanuts.
