Ingredients
2 lbs fresh tomatoes (about 6)
3/4 lbs fresh mozzarella cubed 1/4 inch
1 1/4 cup fresh basil
1/2 cup halved pitted black olives
4 t balsamic vinegar
1 1/4 t salt
1/2 t grated black pepper
1 lb spaghetti
1/2 cup olive oil
3 cloves garlic minced
Preparation
In a large glass or stainless steel bowl, combine chopped tomatoes with the mozzarella basil, olives, balsamic vinegar salt and pepper.
In large pot of boiling water cook spaghetti. Drain andd to tomatoe mixture and toss,
Heat olive oil in small frying pan over moderately low heat. Add the garlic and cook stirring for one minute. Pour the oil over the pasta and toss again
If preferred, add drained capers, chopped red onion or grated parmesan to the pasta.
