Ingredients

1 large spaghetti squash

6 large eggs slightly beat

2 cups cherry tomatoes cut in half

2 cups crimini mushrooms sliced

1 cup smoked mozzarella grated

Salt and pepper to taste

Preparation

Preheat oven 350 degrees Cut spaghetti squash in half, remove seeds. Bake for approximately 40-45 minutes until soft. Cool. Scrape squash into spaghetti like strands, into large mixing bowl. Mix eggs, tomatoes and mushrooms with squash. Salt and pepper to taste. Pour into greased pan. Sprinkle smoked mozzarella on top. Bake for approximately 45 minutes, until firm. Cool slightly before cutting
