Ingredients

1/2 Squash

1Tblsp white vinegar

1Tblsp olive oil

10 grape tomatoes, halved

roasted pine nuts

feta cheese

salt and pepper to taste

Preparation

cut squash in 1/2. put face down on a shallow bowl and fill with about 1" high water. poke some holes and wrap the whole thing w/ seran wrap. then microwave for approx 6 to 7 minutes until the shell feels a bit soft. after cooling, scoot out the inside w/ a fork.

Then mix the following w/ the squash: 1 T of white vinegar. 1 T of olive oil. about 10 grape tomatos (cut in half) some roasted pine nuts. some feta cheese. salt and pepper to taste.
