Ingredients
20 pounds tomatoes, chopped
2 cups chopped onion
2 cups green peppers
2 cups celery
1 1/2 cups cooking oil
4 cloves garlic (chopped)
2 cups chopped parsley
4 tablespoons chili powder
3 tablespoons salt
3 tablespoons sugar
2 teaspoon oregano
2 teaspoon rosemary
2 teaspoon allspice
1 teaspoon basil
2 teaspoon black pepper
1 teaspoon cayenne pepper
2 teaspoons thyme
2 teaspoons sage
1 teaspoon cumin seed
Preparation
Mix all vegetables together and cook coverd 1/2 hour.
Mix spices together and add to vegetables. Cook on low heat 2 hours or more - stir frequently.
