Ingredients

3 pound chicken (whole bird w/head)

1/2 cup light soy sauce

3 tablespoon dark soy sauce (for color)

1/4 cup rice wine

1/2 cup water

1 tablespoon oyster sauce

1 teaspoon five spice powder

3 tablespoon brown sugar

2 cloves garlic

1 tablespoon ginger

2 anise star

Preparation

  1. Put all ingredients in pot and bring the mixture to a boil.
  2. Reduce heat to medium and add the chicken. Cook covered for 15 minutes.
  3. Flip the chicken and cook covered for another 15 minutes
  4. Skim the fat and retain the remaining mixture in the pot. This is your sauce!
