Ingredients

2 tsps canola oil

1/2 cup chopped onion

1/2 cup chopped red bell pepper

2 garlic cloves, minced

1 jalapeno pepper, seeded and minced

1 c. frozen whole kernel corn

1 c. frozen baby lima beans

1/2 tsp salt

1/2 tsp ground cumin

1/2 c. water, divided

2 tbsps chopped fresh cilantro

Preparation

  1. Heat oil in a large skillet over med heat. Add onion and next 3 ingredients, saute 2 mins.
  2. Add corn, lima beans, salt and cumin, saute 3 mins. Add 1 tbsp water to pan, cook over medium heat about 1 min or until pan becomes almost dry. Repeat procedure with remaining water until vegetables are tender and stir in cilantro.
