1-pound Bow-Tie pasta 1-tblsp. Olive oil or butter
1-onion diced 2-cloves garlic, minced
1-jalapeno pepper, seeded and diced 2-pounds tomatoes, diced
Fresh corn kernels (about 3 ears) 1 ½-pounds grilled chicken breast
Juice of one lime ¼-cup cilantro
Salt and pepper to taste
Preparation
In a large pot add the pasta to rapidly boiling salted water till cooked. While the pasta cooks heat a large skillet and sauté the onions until translucent. Add the garlic and jalapeno pepper. Cook one minute. Add the tomatoes and corn and cook for 8-10 minutes. Add the chicken, lime juice, and cilantro. Salt and pepper to taste. When the pasta is done drain the water and toss together. Serve immediately.
